When people think about catering, they usually picture the end result – plates piled high, guests tucking in, everyone happy. And yes, that’s the goal. But what you don’t always see is everything that happens before that first bite is taken.
Because the truth is, a smooth food service doesn’t just happen. It’s planned, timed, prepped and (sometimes) powered by very early mornings.
Take a recent job for example. Hog Roast Tyne and Wear was brought in to cater for 375 guests at a staff event for Smulders – no pressure, right? The plan was an outdoor luncheon kicking off at 11:30am, which meant one thing for the team: an early start.
And we’re talking early.
Our catering managers Chris and Kayleigh know that when you’re feeding that many people, timing is everything. So, the team arrived at the site just as the day was getting going, got the grills fired up and started dividing and conquering. Everyone had a role and every minute counted.
One of the things Hog Roast Tyne and Wear prides itself on is cooking everything fresh on-site. It takes longer, sure – but the difference in quality speaks for itself. With that in mind, the focus was on getting the meats just right.
Handmade 100% British beef burgers, butcher’s sausages, Thai chicken kebabs and sticky spareribs were all carefully prepared over low heat, giving them time to develop that rich, smoky flavour. Guests could load them into soft buns or wraps, adding melted cheese and fried onions to build something properly satisfying.
And for those skipping the meat, Hog Roast Tyne and Wear made sure there was no compromise. BBQ-pulled jackfruit sliders, coated in hickory sauce and grilled vegetable kebabs gave just as much flavour and variety.

Once the mains were sorted, it was time for the extras – the kind of sides that quietly bring everything together. Fresh Greek salad, creamy coleslaw and a generous mix of fries (both classic and sweet potato) gave people plenty to choose from, with sauces, salt and vinegar on hand to finish things off.
By the time service began, everything ran like clockwork.
And the reaction? Exactly what we’d hoped for. Guests were impressed from the first look to the last bite, and the atmosphere stayed upbeat all the way through.
Proof that when the behind-the-scenes work is done right, everything else just clicks into place.
