When the sun finally decides to show up, the last place anyone wants to be is sitting under fluorescent office lights pretending not to notice the weather outside.
The team at GBUK Ltd clearly felt the same way, so instead of another afternoon behind computer screens, the team headed outdoors for a lively summer get-together, complete with drinks, games and great food provided by yours truly. Safe to say, it was a much better way to spend the day.
Hog Roast Selby spent the morning getting our Southern Slow Roast Menu ready, taking our time with every element because the best flavours can’t be rushed. The meats had been pre-marinated well in advance – that step matters more than most people realise, and the difference it makes to the final flavour is hard to overstate. From there, everything was cooked low and slow over the flame for hours, which is the only way to get the kind of results this menu promises.
Guests had plenty to choose from once lunch was served. BBQ pork butt, melt-in-the-mouth Texan-style 24-hour beef brisket and Cajun-spiced whole roasted chickens formed the heart of the buffet, while a trio of sauces let everyone customise their plate. Some played it safe with our smoky sweet BBQ glaze, while others headed straight for the hickory bourbon sauce or the Cajun hot pepper sauce to add an extra kick.
As for the veggie and vegan guests, Hog Roast Selby had rustled up grilled vegetable kebabs with optional halloumi that felt considered rather than cobbled together – always the goal. And the sides – Greek salad, corn cobbettes, gourmet coleslaw and a mix of sweet potato and classic fries – were as eye-catching as they were delicious, which on a hot summer’s day is exactly what you want alongside something rich and smoky.
Drinks came courtesy of mobile bar Luxe Fizz, who are just getting started and frankly made an excellent first impression. And once the plates were cleared, the GBUK team rounded the afternoon off with a few rounds of Bongo Bingo – chaotic, brilliant and exactly the kind of energy a team that works this hard deserves. We won’t lie. We were very tempted to join in.
